Strawberry Protein Pancakes

By Peachy Palate..."I am admittedly wildly obsessed with Stacks of Goodness Protein pancake mixes. I initially thought the chocolate would be my number one but it’s a toss up between this strawberry option and the blueberry! Freeze dried fruit is included in the mix which truly makes it something special. 
 

The flavour is incredible, the ease of use exceptional and the texture is incredibly moreish and oh so satisfying. A little chew, doughly, not at all dry… OBSESSED!

Preparation Time - 5 minutes
Cooking Time - 8 - 10 minutes

Ingredients
  • 1 pack of Stacks of Goodness Strawberry Protein Pancake Mix
  • 2 large eggs
  • 250ml non dairy milk, I used oat milk

Directions

  1. Mix together eggs and milk in a large jug or bowl. Add the mix and whisk together with a fork to ensure there are no lumps.

  2. Heat a large pan over a medium heat. Once hot grease with a little oil or butter.

  3. Cook 2.5 tbsp of batter per pancake. Once bubbles appear, flip the pancakes and cook on the other side for a minute or two.

  4. Serve topped with strawberries, plain or vanilla yogurt and a drizzle of honey or maple syrup.
