
Blueberry Protein Pancake Recipe

"The strawberry pancakes turned out so well I just had to stick to the instructions on these too. There is no need to mess with perfection.
Topped with fresh blueberries, all the smooth peanut butter, a generous drizzle of honey and a sprinkle of bee pollen for good measure, these pancakes were all kinds of delicious."
Preparation Time - 5 minutes
Cooking Time - 8 - 10 minutes

Ingredients
- 1 pack of Sweet Pea Pantry Blueberry Protein Pancake Mix
- 2 large eggs
- 250ml non dairy milk, I used oat milk
Directions

Mix together eggs and milk in a large jug or bowl. Add the mix and whisk together with a fork to ensure there are no lumps.

Heat a large pan over a medium heat. Once hot grease with a little oil or butter.

Cook 2.5 tbsp of batter per pancake. Once bubbles appear, flip the pancakes and cook on the other side for a minute or two.

Serve topped with peanut butter, blueberries, bee pollen and a generous drizzle of honey.
