Chocolate Protein Waffle Recipe
Cooking Time: 10 minutes
- 160g Sweet Pea Pantry Chocolate Protein Pancake Mix
- 1 ripe banana (approx. 100g) well mashed
- 1 large egg
- 180ml milk of choice; I used oat milk
- Chocolate sauce or a chocolate nut butter, raspberries and chocolate chips to serve
Preheat your waffle iron according to the manufacturer's instructions.
Mix together banana, egg and milk in a large bowl.
Add pancake mix and mix well with a fork to ensure there are no lumps. The mixture should be relatively thick so that it doesn’t spread too much when you put it into the waffle iron; like a thick American style pancake batter.
Grease waffle iron with spray oil.
Spoon 2 tbsp of the batter into the centre of each square waffle iron section; if you want to make 8 smaller waffles. Close and cook for 6 - 8 minutes or according to the manufacturer’s instructions.
Remove and repeat with remaining batter. I’ve found the best way to reheat waffles and crisp them back up is to give them 1 minutes in the air fryer!
Top with chocolate sauce or nut butter, chocolate chips and raspberries if desired.
